Weekly Recipes – Pea and Pesto Pasta

Ingredients

Pasta (any),

Broccoli,

Peas,

Basil,

Spinach,

Olive oil,

Lemon juice,

Garlic,

Parmesan – optional,

Pine nuts – optional,

Method

  1. To make the pesto combine the basil and spinach with the olive oil, lemon juice, garlic and salt and pepper and blend together with a stick blender or in a food processor. Adding a little of the oil mixture at a time to get the right consistency.

  2. Cook the pasta as per the packet instructions.

  3. Boil the broccoli florets and peas until tender,

  4. Mix everything together, making sure to give it a good stir so that pesto covers all the pasta.

Adjust quantities to suit.
