Recipe Of The Week – Moroccan Beef or Lamb

500g mince or stew,

250g diced carrots or any vegetable,

2 red or any coloured peppers,

2 large onions,

4 cloves of garlic,

1 tin chickpeas,

2 tins of chopped tomatoes,

2 tablespoon of tomato puree,

2 tablespoon of vegetable oil or butter,

1 teaspoon black pepper,

1 teaspoon turmeric,

1 teaspoon of garam masala,

½ teaspoon of mild paprika,

½ teaspoon of hot paprika,

2 beef stock cubes

Method

1. Pour oil, onions, garlic and all spices in the pot and mix well

2. Add mince or stew and mix with all spice until mince is brown

3. Add carrots, chopped tomatoes, tomato puree and peppers, chickpeas and beef stock cubes with one cup of boiling water and leave it on a low heat. Ready in 45minutes

4. Serve with couscous or rice
